Ahhh. Old favs are coming back.
I used to have to make these for my best friend many years ago. She loved them. They’re just cubed potatoes in white sauce. Or you can use new potatoes.
4 large potatoes
2 Tbsp. butter
1 Tbsp. flour
1 cup milk
salt and pepper
chives or parsley
Peel and cut potatoes into 1 inch chunks.
Bring to boil in salted water.
Lower heat to simmer until potatoes are just tender, but still firm. Do not overcook.
Meanwhile, melt butter in a saucepan.
Add in flour and whisk until smooth.
Gradually add in milk.
Bring to a boil, whisking occasionally. Cook until slightly thickened, about 2 minutes.
Add salt and pepper to taste.
Pour over drained potatoes.
Cook for 2 more minutes, or until sauce thickens.
Top with chives or parsely.
