1 cup fresh cranberries, chopped
3 Tablespoons sugar
2 cups oven dried raisin bread cubes.
1 teaspoon grated orange peel
¼ teaspoon salt
1/8 teaspoon ground cinnamon
2 tablespoons butter at room temperature
2 tablespoons orange juice
Mix cranberries and sugar. Add bread cubes, orange peel, salt and cinnamon.
Toss lightly with 2 tablespoons soft butter and 2 tablespoons orange juice until well mixed.
Transfer mixture to a butter coated baking dish and cover with foil. Bake at 350 until cooked through, 45 minutes, then remove foil and cook until bread is golden, 15 minutes more.
