Cranberry Spinach Salad with Warm Honey Dijon Bacon Dressing

1 -6 oz package salad spinach

1/2 cup Craisins- Sweetened Dried Cranberries

Red Onion Slices

Dressing

4 slices bacon, cooked crisp and crumbled

1/2 cup honey

1/2 cup lime juice

2 Tablespoons Dijon Mustard

Wash and clean spinach. Divide among 4 salad plates.

Top each with 2 tablespoons Craisins and red onion slices.

Combine dressing ingredients in a small glass mixing bowl using a wire whisk.

Heat dressing in microwave on high for 30 seconds. Dressing should be warm, but not hot. Too hot and you will wilt the spinach.

Serve with salad.
