½ cup butter, softened
½ cup pure cane sugar
½ cup brown sugar, packed
¾ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
2 eggs
1 teaspoon vanilla
1 cup all purpose flour
½ cup dried cranberries
½ cup coursely chopped white chocolate
1 cup fresh cranberries
Whipped cream
Preheat oven to 350 F.
Line a 9x9x2 inch baking pan with foil
Coat foil with cooking spray
In a large mixing bowl, beat butter until softened
Add sugar, baking powder, baking soda, and salt
Beat in eggs and vanilla until well combined.
On low speed, add in flour.
With a spoon or whisk, stir in dried cranberries and white chocolate.
Spread batter into pan.
Sprinkle fresh cranberries on top and lightly press in with a spatula.
Bake 25 – 30 minutes, or until toothpick inserted near the center comes out clean.
Cool in pan on wire rack for 1 hour.
Lift foil to remove.
Cut blondies into bars and serve with whipped cream.
Optional – you can season the whipped cream with ¼ teaspoon of cinnamon while beating.
