1 –16-oz. can whole berry cranberry sauce
1/2 cup quartered dried apricots
½ teaspoon grated orange peel
¼ cup fresh orange juice
1 large shallot, chopped (1/3 cup)
2 teaspoons cider vinegar
1 teaspoon dry mustard
1 teaspoon grated fresh ginger
2 lb. boneless pork roast, well trimmed
Mix all ingredients except roast in slow cooker pot.
In a separate very hot pan, quickly sear the roast on all sides.
Add pork roast and spoon cranberry mixture on top.
Cook on high for 4-5 hours.
On medium 6-7 hours
On low 8-9 hours
