Cran Apple Sweet Potato Crisp

 

 

1 lb. Sweet potatoes (3-4 medium) , peeled, cooked, and mashed with ¼ cup butter. 

Stir in – ½ cup chopped apple and ¼ cup dried cranberries 

Put sweet potato and fruit mixture into 1 quart baking dish 

In a small bowl, mix 2 Tablespoons flour, 2 Tablespoons brown sugar and ¼ teaspoon cinnamon.

Cut in 3 Tablespoons cold butter until mixture is crumbly.  

Sprinkle crumb mixture over the top of the sweet potatoes

 Bake 35 – 40 minutes

Makes 5 servings.

Doubles nicely.
