1 pound potatoes cut into 1 inch cubes
4 large carrots cut into Â½ inch pieces
3 celery ribs, cut into Â½ inch pieces
2 medium zucchini, cut into Â¾ inch pieces
1 medium onion, cut into Â¾ inch pieces
Â¼ cup finely chopped fresh parsley
1 bay leaf
fresh ground black pepper to taste
4 cups low sodium chicken or beef broth
Place everything in crock pot.
Bring to boil.
Reduce heat and simmer on medium for 6-7 hours.
To serve, ladle into bowls. Top with shredded cheese if desired.
