Chunky Chicken & Cucumber Salad

3-4 cooked, boneless, skinless chicken breasts, cut into chunks

1 cucumbers, peeled and cubed

1 Tablespoon apple cider vinegar

¼ teaspoon ground black pepper

Dark green lettuce

1 sweet red pepper, seeded and chopped

½ teaspoon salt

4 oz. plain yogurt

 

In a medium bowl, mix cucumber and pepper.

Sprinkle with the vinegar.

Let stand for 5 minutes.

Stir in chicken and yogurt, tossing gently.

Cover and refrigerate until completely chilled.

Serve on lettuce.

Makes 4 servings.
