Chicken Parmesan Sandwiches

I call them Secretly Healthy Killer Chicken Parmesan Sandwiches

This sandwich is soooo good! And every ingredient has a health benefit.

French Bread (lower in fat)
Olive Oil (good for lowering cholesterol)
Garlic (numerous health benefits – used medicinally for centuries – also keeps vampires away)
Spaghetti Sauce (lycopene- cancer fighting – also anitoxidents)
Skinless Chicken Breasts (low fat – protein)
Mozzarella Cheese (low fat – calcium)

Warm up left over chicken. Cut into slices or shred. 1 good sized skinless chicken breast will make 2 sandwiches. To warm up and keep moist, put a little water in the pan and heat covered over med. low heat.

Warm up left over spaghetti sauce

Make Garlic bread

Place chicken on bottom portion of garlic bread.

Lightly cover with spaghetti sauce

Cover with grated mozzarella cheese

Place in broiler with oven set at 450 for a couple of minutes to melt cheese. I put them on a piece of foil so I don’t have to clean the broiler pan. You know, clean freak and all…

Place garlic bread top on sandwich

Serve with a big tossed salad and some fresh fruit.

It takes about ½ a chicken breast half for each sandwich.

This is a very filling sandwich.
