Chicken Cacciatore

 

This is so impressive and so good, you won’t believe how easy it is!

 

1 ½ pounds boneless, skinless chicken breasts – cut into 1 inch strips

1 medium onion – thinly sliced

1 medium green pepper, julienned

2 Tablespoons olive or coconut oil

1- 15 oz. can tomato sauce

1- 14.5 oz. can stewed tomatoes

2 teaspoons garlic powder

½ teas. crushed oregano

½ teaspoon fresh ground black pepper

Hot cooked pasta

Shredded Mozeralla cheese

 

Heat oil in a large skillet. Cook chicken, onion, and green pepper until chicken is lightly browned and vegetables are tender. 

Add tomato sauce, tomatoes, and seasonings. Bring to a boil. 

Reduce heat and simmer uncovered for 5 minutes or until heated through. 

Serve over pasta.

Top with cheese.

Makes 6 servings.
