3 medium potatoes
1 cup cauliflower florets
Make mashed potatoes like you normally would, except you’re substituting 1 cup cauliflower florets for 1 potato.
While potatoes and cauliflower are cooking, cut up broccoli florets into very small pieces. Use at least ½ cup.
After the potatoes are mashed, stir in broccoli and 1 cup shredded cheddar cheese. Stir until cheese is melted.
