Black Eyed Peas & Sausage Skillet Dinner

This is a very southern dish, made faster by using canned black eyed peas. It is said to be good luck to eat black eyed peas on New Year’s Day.

 

1 lb. bulk pork sausage* cooked (like ground beef) and drained

1 15.5oz. can black eyed peas, drained and rinsed

1 14.5oz. can petite diced tomatoes, with juice

½ cup chopped green pepper

¼ cup chopped onion

2 garlic cloves, minced

½ teas. Salt

½ teas. Dried organo

¼ teas. Dried rosemary, crushed

¼ teas. Black pepper

½ cup shredded chddar cheese

 

In a large skillet, cook sausage, breaking up. Drain off grease.

Add the rest of the incredients except cheese.

Bring to a boil.

Reduce heat and simmer 10-15 minutes.

Sprinkle with cheese.

Cover and turn off heat.

Makes 2-4 main dish servings or 4-6 side dish servings.

* You can use a tube of sausge and cook like you would cook ground beef.
