Black Bean Salsa


1 can black beans, rinsed and drained

1 small can whole corn, drained (or 1 cup frozen corn cooked)

1 large tomato seeded and chopped

1 large avocado, peeled and chopped

1 medium red onion, chopped

1 jalapeno, chopped

¼ cup fresh cilantro, chopped fine

3 Tablespoons lime juice

2 Tablespoons olive oil

1 Tablespoon balsamic vinegar

1 teaspoon fresh ground black pepper

1 teaspoon cumin


Mix and serve with tortilla chips, or as a side dish.
