Best Fudgy Brownies

These are so chocolaty and moist, and very rich. You will never want another kind of brownie. Luckily, they’re really easy to make!

 

1/4 cup canola oil

1/2 stick melted butter (let the butter cool a bit so it doesn’t cook the eggs)

1 cup white sugar

1 teaspoon vanilla extract

2 eggs

1/2 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/4 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped pecans or walnuts (optional)

 

Preheat oven to 350 F. 

Grease an 8×8 baking pan – grease well

In a medium bowl, mix oil, butter, sugar and vanilla

Beat in eggs

In a separate bowl, mix flour, cocoa, baking powder and salt

Gradually add flour mixture to the wet mixture. Stir until just blended.

Stir in nuts if using.

Spread evenly in prepared pan. Use a good spatula. The mixture is very fudgy…

Bake for 25 – 30 minutes or until knife inserted in center comes out almost clean. Do not overcook. 

Let cool completely before trying to cut into squares. Seriously – take my word on this.

I find that 1 inch by 2 inch pieces satisfy just fine. They are very rich and filling. 

And if that is not enough, you can top with vanilla ice cream and hot fudge 😉
