This is a great way to use those over-ripe bananas. Baking time is long – so it really doesn’t qualify as quick, but everyone needs a good banana bread recipe in their collection.
½ cup butter, softened
1 cup sugar
2 eggs
1 teaspoon baking soda
2 cups flour
1 teaspoon vanilla
3 very ripe bananas
Optional – add nuts – usually walnuts or pecans
Preheat oven to 350 F.
Grease a 9x5x3 inch loaf pan.
Mix all ingredients with a mixer on medium setting until thoroughly combined.
Pour into prepared pan.
Bake 70 minutes or until toothpick inserted in center comes out clean. Check at 60 minutes.
Cool at least 15 minutes before trying to cut.
