OK, this one is not healthy, and it’s kind of a pain in the neck to make – but it’s a favorite party appetizer. I personally love ’em, if someone else makes them!
Original Version –
1 can whole water chestnuts, drained
1 lb. bacon, strips cut in half
1 cup ketchup
1/2 cup brown sugar
Preheat oven to 400 F
Wrap each water chestnut with 1/2 strip bacon, secure with wooden toothpick
Place in a single layer on cookie sheet
Mix ketchup and brown sugar until completely mixed
Spoon over water chestnuts
Bake until bacon is crisp – 30-40 minutes
Version 2 –
At least this version, you use pre-cooked bacon so you don’t have to cook the bacon first. That helps –
12 slices fully cooked bacon, cut in half crosswise
1 8 oz. can whole water chestnuts, drained
1/2 cup Mayo
1/2 cup brown sugar – packed
1/4 cup chili sauce
Heat oven to 350 F.
Wrap bacon around water chestnuts and hold in place with toothpicks
Place wrapped chestnuts in a shallow baking dish.
Mix remaining ingredients and pour over water chestnuts.
Bake 30 minutes.
Makes 24 – which is not very many. You’ll probably want to double that.
