Avocado – Artichoke & Wild Rice Salad

2 -6 oz. Packages long grain & wild rice mix

2-3 ripe avocados, peeled and chopped

1 -8oz. jar marinated whole mushrooms, not drained

1 -6oz. jar marinated artichoke hearts, not drained

1-2 medium tomatoes, diced

2 celery ribs, chopped

2-3 green onions, chopped

½ cup Italian salad dressing

 

Prepare the rice according to package directions. Cool.

Transfer rice to large bowl

Add remaining ingredients and toss to coat.

Cover and refrigerate overnight.

Makes 10-12 servings
