Salad –
4 cups baby spinach
½ cup raisins
1 large apple, finely sliced
½ cup toasted pine nuts, or chopped pecans
Dressing –
1½ Tablespoons apple cider vinegar
1½ Tablespoons red wine vinegar
½ Tablespoons sweetener – sugar or maple syrup
4 Tablespoons olive oil
1/8 teaspoon paprika
Put dressing into a jar or cruet. Cap and shake well.
Separate spinach into serving bowls.
Top with apples, raisins, and nuts.
Drizzle with dressing.
