Menu Planning Day

I was going through the grocery sale papers looking for some inspiration. The truth is, I’ve really been enjoying my salads with all of the freshest veggies. I even got my first tomato this week! Nothing is better than homegrown tomatoes. Anyone remember that song? 😉 Showing my age again…

I’ve really had a taste for beef. And as luck would have it – there’s lots of steak on sale this week.

I’ve had a tough week, and I suspect that there is some reason for my craving for beef. My body says it needs it, and who am I to argue? You know that’s true? When you have a craving for a real food, it’s your body telling you it needs something.

You know, steak is best when you bring it home and cook it right away. Never quite as good once it’s been frozen. OK, I guess that’s true of a lot of foods, but who can run to the store every single day?

Cantaloupe is dirt-cheap this week. So are bananas, plums, strawberries, watermelon, mangoes, peaches, nectarines, green peppers, tomatoes, corn, celery, radishes, avocados, cabbage…

My friend (the one who lost all that weight a couple of years ago when she learned how to eat right) made stuffed cabbage for the first time recently. Slow cookers are a great way to have a hot fresh meal waiting for you – especially when school starts. And with cabbage costing only 30 cents, that dish is certainly economical.

I made salsa so we can have Spanish omelets this weekend. And my spaghetti sauce turned out really good this time. When I was putting out dinner tonight, it sure looked like a lot of food! A generous plate of mostacolli, a big salad, green onions, and French bread.

Have I started your taste buds watering yet?

I hope this inspires you to eat healthier this week 😉
