1-11-oz can mandarin oranges
½ medium red onion, thinly sliced
2 Tablespoons sliced almonds
1 Tablespoon red wine vinegar
1 teaspoon Dijon mustard
¼ cup olive oil
1 Tablespoon sesame oil
Fresh ground black pepper
Drain oranges, reserve juice.
In a large bowl, toss spinach, orange slices, onions, and almonds.
In another bowl, combine juice, vinegar, and mustard. Slowly
pour in oils whisking until blended. Add black pepper to taste.
Serve salad and dressing.
Also works well with green leaf lettuce or romaine.
