Keeping Easter Easy

Marshmallow topped sweet potatoesI don’t know why, but I’m never inclined to make a complicated Easter dinner. I like to keep things simple.

This year I have my sister’s dietary restrictions, so a lot of things are out. Then we have a couple that will only eat a couple of vegetables, another that won’t eat any vegetables, but he’ll eat fruit. UGH!

So here are some simple menu ideas –

Ham the way my grandmother made it

Sweet Potatoes

Twice Baked potatoes

Green Beans plain with a little butter and pink sea salt. You can throw in some slivered almonds to make it a little fancier.

Or just steamed broccoli.

A Pineapple Casserole that I stumble across. Suppose to be an old southern recipe. I had never heard of it. It is good.

And then…Hot Fudge Brownie Sundaes. These brownies are so rich, you can’t eat more than one.

That’s more than enough!

OK, maybe some rolls, but that’s it!

Whatever you’re serving up, I hope you have a great Easter!

Just remember what its about. Its not eggs or bunnies…
