I have one of those funky calendars that has weird holidays listed on it. It says that July 30 is National Cheesecake Day.
I wonder if that is official? Or do we need a reason?
I dug up this scrumptious Blueberry & White Chocolate Cheesecake recipe for you –
1 cup roasted ground hazelnuts
½ cup brown sugar
4 Tablespoons melted butter
4 ounces white chocolate, finely grated
8 ounces cream cheese, softened
¼ cup sour cream
2 cups fresh blueberries
¼ cup sugar
White chocolate shavings
Line bottom of a 9 inch tart pan with parchment paper.
Mix hazelnuts, brown sugar and melted butter.
Press into bottom of pan, and a little up the side.
Melt white chocolate until melted and smooth, stirring often.
Whip cream cheese for about 3 minutes.
Add the melted white chocolate, beat for another minute.
Add sour cream. Beat until very smooth.
Pour into prepared crust.
Chill until firm.
Toss clean blueberries with ¼ cup sugar.
Heap on top of cheesecake.
Garnish with White Chocolate shavings if desired.
In a real hurry? Use a prepared vanilla cookie crust. Or even a chocolate one!
