Do you have a bunch of squash?
Are you sick of squash?
Would you like something a little different?
How about a quick stir-fry with jalapeno and garlic?
Cut 2 or 3 medium yellow squash into 1/4 inch slices.
Chop a smallish onion.
Seed and chop 2 jalapenos.
Mince one large garlic clove.
Heat 2 tablespoons oil.
Stir-fry everything you just cut up until tender – 10-12 minutes.
Add 1/2 Tablespoon butter and a little salt and fresh ground black pepper.
That’s it. Serves 4.
Oh, some people add a cup of corn. I don’t like it that way, but you might.
