Here we are – the final stretch before Christmas, and so much left to do!
But you gotta eat, and feeding your family would be nice too 🙂
Oh, there’s fast food, but you need energy, and the weather outside is frightful – you need to stay healthy.
Here are some of my favorite ‘go-to’ dinners for when I’m really busy –
Steak, baked (microwave) potato, salad
Pork chop, baked (microwave) sweet potato, green beans
Fake Baked Mostaccioli, salad, garlic bread (throw the sauce together the night before)
Chicken and Potato Teriyaki, green beans
Sautee’ chicken breast, baby carrots and broccoli, (put 1/2 inch water in pan, throw in baby carrots, cook on medium heat until carrots are softened, throw in broccoli florets and cook another 2 minutes.)Â a rice side dish.
Home made cheeseburgers (1/3 lb. lean ground beef – no fillers, just seasoned), variety of toppings – cheese, lettuce tomato, onion, olives, … and usually a salad. Its so filling you usually don’t even need another side dish.
All of these take less than 1/2 hour to get on the table.
The key to making this work is to make sure you have a plan, an you’ve taken the meat out of the freezer either the night before, or before you leave for work.
You’ll save money, have more energy, feel better, and maybe even lose a couple pounds. Can’t beat that, can you?
