Its fish season. Every Friday during lent, many turn to fish for their meatless meals.
Fish is one of the fastest things you can cook.
Heat a teaspoon of oil in a large nonstick skillet over medium-high heat.
Season the fish with salt and pepper and cook until opaque throughout, 3 to 4 minutes per side. It should flake easily. Do not overcook.
You might want to season white fish with lemon pepper. I’m using the term white fish as a category here. It can be trout, halibut, cod…
Also good for white fish is drizzling with a mix of melted butter, a little lemon juice, and garlic.
Meatier fish like tuna is good with traditional salsa or mango salsa.
You can glaze salmon with a little maple syrup.
You can serve with a big salad along with crusty bread with olive oil, garlic and Parmesan for dipping, or buttered noodles.
That’s it. The basics. You can’t get much simpler, can you?
