Want something fast and fun for dinner tonight? These wraps fit the bill!

Season chicken breasts with garlic powder and fajita seasoning. If you can’t find fajita seasoning you can use a little chili powder, or sometimes I use Weber Steak & Chop Seasoning. Cook chicken breasts in a little coconut oil, or your favorite oil. Figure that one medium chicken breast will make 2 wraps. One breast per person will give you more than enough.

Shred the chicken with 2 forks. Or slice. Or cube.

Warm up refried beans. I use Old El Paso Spicy Fat Free. They give a little kick.

Warm up flour tortillas. I just do it for a minute on each side on a griddle pan. Put them on a plate and cover with a clean dish towel to keep warm.

Top each tortilla with a spoon of refried beans

Then, chicken

Then, grated cheddar or Mexican blend cheese

Then, shredded lettuce, diced tomatoes, onions, sliced black olives

Everyone can custom create their own. My daughter likes ranch dressing on hers. Sometimes I like salsa, but I don’t always have some made, so I’ll use a few drops of Open Pit original barbecue sauce.

You might like some healthy guacamole on yours.

You just have to be careful not to over stuff them or they’ll be really messy and hard to eat.

You might like your refried beans on the side topped with grated cheese.

Because there are already veggies in the wrap, I usually serve fresh fruit on the side to add a little coolness.

Most people will eat 2 or even 3 wraps.
