I thought I’d help you plan dinner tonight. This is one of those really quick, really healthy, everyone loves it kind of dinner.
One of the fastest freshest dinners is chicken wraps. Shred, slice, or dice your chicken and put out –
Warmed Tortillas
Refried beans
Guacamole
Salsa
Diced fresh tomato
Diced onion
Shredded lettuce
Shredded cheese
Bacon
My daughter likes ranch dressing on hers – but not the beans.
My friend makes a version in a pita pocket with Caesar dressing.
Let everyone make their own creations!
Can be served with Spanish rice, or beans, or rice and beans, and
fresh fruit or the fruit salad below.
Honey Lime Fruit Toss
A quick summer favorite anytime of year!
Can pineapple chunks, drain juice, reserving ¼ cup
Can mandarin oranges, drained
1 sliced banana
Sliced Strawberries
Sliced Kiwi
¼ teaspoon grated lime peel
2 Tablespoons lime juice
1 Tablespoon honey
Place prepared fruits in a bowl.
Mix reserved pineapple juice, lime peel, limejuice and honey.
Our over fruit and toss gently.
