3 dinner plan for busy weeks

You know one of my fall back plans for busy season is my 4 dinner plan.

Night one – a chicken dish. Cook extra chicken breasts and set aside. After dinner, Make your red sauce.

Night two – take those extra chicken breasts you cooked last night, reheat and shred. You can make chicken Parmesan sandwiches, chicken wraps, barbecue chicken sandwiches,  Or another sandwich creation. My daughter’s favorite creation is shredded chicken on garlic bread with provolone cheese and avocado. Serve your sandwiches with salad and fruit. Beans also work. You’ll want refried beans if you are making chicken wraps.

When I reheat the chicken, I put a couple tablespoons of water in the pan and heat over a low heat to keep the chicken juicy. Then season according to what you are going to make with it.

Night three – Pasta! the sauce will be perfect today. You can get frozen ravioli or tortellini, or mostaccioli noodles. Make sure the sauce is nice and hot. top with shredded mozarella cheese and let it sit for a minute for the cheese to melt. Serve with salad and maybe some wine. Its already carb heavy, so don’t serve bread.
