The Cost of Getting Sick

 

I hope you had a happy Father’s Day. Ours was pleasant. The weather turned out to be nice, but we were having heart attacks in the morning. 2 back-to-back rainstorms came through. My sister said every time it rains, you just want to cry. It’s been pretty tough lately.

 

My sister had dinner today. We had turkey. That was really good. You’re over the turkey burnout by this time of the year. She made homemade cranberry sauce, and it was really good. But you know I love cranberries – both for the taste and the health benefits.

 

My step mom had breast cancer a few years ago. And my father is taking meds for an enlarged prostate. I thought to myself, ‘that’s weird.’

 

Wouldn’t you know it – when I got home to check my emails, one of the email newsletters talked about that. It said that’s common because they would have the same diet, or be exposed to the same chemical toxins in the home. That makes sense.

 

My mother and her boyfriend both died of the same horrible cancer within 6 months of each other. I had asked the doctor about that – I mean, cancer isn’t contagious. She said they abused their bodies the same way.

 

And none of them eat/ate much in the way of fruits and vegetables.

 

I had to learn to like vegetables. I started off with stuff covered in sauces or dressings, or cheese. I’m kind of doing the same thing now with fish. I don’t really care for it, but I’d rather eat that than get some awful sickness.

 

Then they started talking about the cost of their prescriptions and health insurance. Oh my gosh. I sure can’t afford to get sick!

 

I guess it your choice. Eat good food, or pay through the nose for meds and health care. I’ll take the good food. How about you?

Thinking About Father’s Day

 

I’ve been missing in action lately. The storms have wreaked some havoc in my life.My computer took a hit – I think it was Sunday night. It’s all kind of a blur. It didn’t look like I was going to be able to save it. Somehow I kept my cool and stuck with it – and thank heaven – I was able to save it!

But then I walked downstairs… and the carpet sloshed. I’m still working on drying it – and spraying it to keep mold from growing. All of the furniture is moved to the dry side of the room. It’s been a real headache, but the only thing we lost was an antique floor lamp. The bottom rusted.

And more heavy rain predicted. So I was out tonight sandbagging the problem area. Fun week… 

But through it all, I was thinking about father’s day. For many years, my grandparents would come over most holidays. My grandfather especially liked the father’s day barbeque.

All I did was take some chuck steaks and marinated them in Italian dressing overnight. Then I would cook them quickly on a hot grill. We would have potato salad and fruits, stuff like that. It was really a pretty easy meal – and he loved it.

Good food doesn’t have to be complicated. Keep it simple so you have more time and energy to spend with your guests!

Easy Vegetables on the Grill

 

You can use just about any combination your little heart desires –

 

Zucchini

Mushrooms

Broccoli

Cauliflower

Tomatoes or cherry tomatoes

Peppers, red, yellow, green,

Onions, Red, pearl, Spanish, etc.

 

The key to success is having the vegetables cut into uniform sized

pieces, 1 – 1 ½ inch each.

 

In a bowl, gently toss the vegetables in Italian Dressing to coat.

 

Place vegetables in the center of a large piece of heavy duty foil. Fold

all edges completely to seal, but leave air space within your packet

for the heat to circulate.

 

Place on the grill. Turn after 4 minutes (this is where the seal is

really important!) Cook another 4-6 minutes until vegetables are

crisp tender.

 

Before opening package, cut a slit to let steam escape.

 

Top with fresh ground black pepper or parmesan cheese if desired.

 

Potatoes take twice as long to cook. You can do the same thing with

potatoes in a separate package, and then mix together before

serving, or serve separately. Experiment! That’s half the fun of

cooking.

Pineapple Slaw

 

Pineapple Slaw

 

2 limes

1 16 oz. bag of cabbage mix for coleslaw

1 cup fresh pineapple cut into matchstick thin strips

 

Grate 1 ½ tsp. lime peel.

 

Squeeze 2 Tablespoon juice from the limes.

 

Toss grated peel, lime juice, cabbage mix and pineapple sticks.

 

Chill.

 

How’s that for easy?

 

You can cheat and add pineapple to ready made coleslaw too.

Carrot & Raisin Salad

 

This is an old favorite. I’ve always liked it. They still serve it at Old Country Buffet, so lots of other people must like it too.

 

Carrot & Raisin Salad

 

3 cups grated carrots

1 cup raisins

1 Tablespoon honey

6 Tablespoons mayonnaise (low-fat or Canola or olive oil)

¼ cup milk

1 Tablespoon fresh lemon juice

¼ teaspoon salt

small can pineapple chunks drained and cut in half or 1/2 cup fresh

 

Toss carrots, raisins, and pineapple together in a large bowl.

 

In another bowl, mix remaining ingredients, and pour over

carrots.

 

Stir carefully.

 

Chill to blend flavors while you make the rest of your dinner.

 

Note –

Use larger holes on grater.

I actually use a peeler. It makes a softer salad.
