Fast & Easy Chicken Wraps

Want something fast and fun for dinner tonight? These wraps fit the bill!

Season chicken breasts with garlic powder and fajita seasoning. If you can’t find fajita seasoning you can use a little chili powder, or sometimes I use Weber Steak & Chop Seasoning. Cook chicken breasts in a little coconut oil, or your favorite oil. Figure that one medium chicken breast will make 2 wraps. One breast per person will give you more than enough.

Shred the chicken with 2 forks. Or slice. Or cube.

Warm up refried beans. I use Old El Paso Spicy Fat Free. They give a little kick.

Warm up flour tortillas. I just do it for a minute on each side on a griddle pan. Put them on a plate and cover with a clean dish towel to keep warm.

Top each tortilla with a spoon of refried beans

Then, chicken

Then, grated cheddar or Mexican blend cheese

Then, shredded lettuce, diced tomatoes, onions, sliced black olives

Everyone can custom create their own. My daughter likes ranch dressing on hers. Sometimes I like salsa, but I don’t always have some made, so I’ll use a few drops of Open Pit original barbecue sauce.

You might like some healthy guacamole on yours.

You just have to be careful not to over stuff them or they’ll be really messy and hard to eat.

You might like your refried beans on the side topped with grated cheese.

Because there are already veggies in the wrap, I usually serve fresh fruit on the side to add a little coolness.

Most people will eat 2 or even 3 wraps.

Celebrate Cinco De Mayo With Fast & Easy Fajitas

Chicken FajitasThis is a favorite around our house any time of year.

The hardest part of this dish is getting everything cut up and in the marinade. When you’re ready to eat, cooking takes only minutes.

1-1/2 pounds boneless, skinless chicken breasts
3 tablespoons fresh lime juice, plus a few drops for
sprinkling on the avocado
2 cloves garlic, minced
1 tablespoon chili powder
2 teaspoons extra-virgin olive oil
freshly ground black pepper
2 red bell peppers, cored, seeded, and thinly sliced lengthwise
2 green bell peppers, cored, seeded, and thinly sliced lengthwise
2 medium onions, peeled and cut into wedges
8 flour tortillas

1 large ripe tomato, seeded and finely chopped
1/2 ripe avocado, thinly sliced and sprinkled with a few
drops of lime juice to prevent browning
1-1/2 cups Salsa Fresca (that means fresh),

Wash and dry the chicken breasts and trim off any fat. Cut the chicken breasts across the grain into 1/4-inch slices. In a non-metal mixing bowl combine the lime juice, garlic, chili powder, olive oil, and salt and pepper to taste and stir to mix. Stir in the chicken and vegetables (except avocado) and marinate for at least 1 hour.

Grill the chicken and vegetables on a grill pan, or stir fry in a skillet over medium high heat until chicken is cooked through and vegetables are crisp-tender (not mushy).

Just before serving, warm the tortillas until soft and pliable and place them in a napkin-lined bread basket.  just heat them for a few seconds on each side on a hot griddle.

Place the tomato, avocado, and salsa in serving bowls.

To serve the fajitas, have each guest place a heaping spoonful of grilled chicken and vegetables on a tortilla. Spoon the tomato, avocado, and salsa on top and roll or fold the tortilla into a neat bundle for eating. Sometimes we add cheese.

They’re fast, easy, fun, delicious, and healthy. And with the way this week has been going, I need fast, easy, delicious, and healthy. Did I forget to mention – cheap?

You need – shredded chicken, refried beans, tortillas, cheese, lettuce, tomato. You can add black olives, salsa, fresh fruit, and maybe a Corona 😉

1 chicken breast will easily feed 2 people. To make this even faster, cook and shred the chicken the night before.

Everyone loves piling on the stuff and making their own creations.  And its an easy way to fill everyon with lots of healthy food.
