Summer Vegetable Mix

2 cups thinly sliced zucchini

1 small onion, sliced

1 green or yellow bell pepper cut into strips

1 medium carrot, grated

1 Tablespoon water

2 Tablespoons butter

ground black pepper to taste

1/4 teaspoon Italian seasoning

1 cup diced fresh tomatoes, seeds removed

1/4 cup grated parmesan cheese

 

Combine vegetables (except tomatoes) water, butter, pepper and Italian seasoning in a large skillet. Cover and cook 1 minute. Uncover and cook, turning with a wide spatula, until vegetables are crisp-tender- 5 - 7 minutes. Do not over cook - mushy vegetables are

terrible!

 

Add tomatoes and Parmesan cheese. Toss and cook another minute.

 

Serve immediately.

 

Serves 8

 

Other Variations-

Red and/or Green bell pepper cut into 1 inch pieces

Add seasoning blend, such as Santa Fe to the oil mixture.

Replace red onion with pearl onions

Add pineapple chunks
