Crumb Coated Tomatoes

This is another old, old recipe passed down through the years!

 

1/2 cup crushed butter flavored crackers

1/4 teaspoon fresh ground black pepper

1 medium tomato cut into 1/4 inch slices

1 egg, beaten

2 tablespoons butter

 

In a shallow bowl, combine cracker crumbs and black pepper.

 

Dip tomatoes in the egg, and then into cracker crumbs.

 

In a skillet, melt butter - cook tomatoes for 2 minutes on each side or until golden brown.

 

Serve immediately.

 

Serves 2.

 

Note -

You can add a little Parmesan to the cracker crumbs. That tastes

good too – and/or a little garlic.
