Cheesy Roasted Green Beans & Peppers

1 lb. fresh green beans trimmed

1 red pepper cut into thin strips

1 yellow pepper cut into thin strips

1 onion cut into thin strips

½ cup balsamic vinaigrette dressing, or Italian dressing

½ cup shredded mozzarella cheese


Preheat oven to 400 F.


Toss vegetables with dressing in a large roasting pan.


Bake 30 minutes or until vegetables are tender. Stir once after 15 minutes.


Sprinkle with cheese and bake 2-3 minutes longer or until cheese is melted.


Makes 6 servings.
