Puffy Parmesan Broccoli Bake

Surprise your family with this truly unusual dish that looks like you slaved over it.

1 egg white

¼ cup mayonnaise or salad dressing

3 Tablespoons grated Parmesan cheese

2 Table spoons chopped parsley

Grated peel of ½ lemon

Fresh ground black pepper to taste

2 lbs. fresh, or 2 –10 oz. packages broccoli spears, cooked crisp-tender. Do not overcook. There's nothing worse than mushy broccoli!

2 Tablespoons melted butter

In a small bowl, beat egg white until soft peaks form.

Fold in Mayonnaise.

Stir in cheese, parsley and lemon peel.

Arrange cooked broccoli in baking dish.

Pour melted butter over broccoli.

Tops with egg white mixture.

Bake at 450°F for 5 minutes, or until puffy and lightly browned.
