Ricotta Mousse and Berry Parfait

8 oz. light ricotta cheese

2 Tbs. orange liqueur

½ tsp. finely shredded orange peel

½ cup blueberries

½ cup strawberries

½ cup raspberries

1 tsp. lemon juice

½ to 1 tsp. sugar, – or 2 tsp. honey

Whisk together cheese, 1 Tbs. orange liqueur, and orange peel.

Cover and chill for at least one hour, or overnight.

In a medium bowl – combine berries, lemon juice, and 1 Tbs. liqueur. Cover and let stand for 15 minutes.

To serve, place a layer of fruit, a layer of cheese mixture.

Sprinkle with sugar or honey if desired.

You can play with this recipe. I want to try using Amaretto instead of the orange liqueur. I've used cream cheese instead of ricotta.

Or I wonder how it would be with pineapple and coconut?
