Key Lime Pie

2 eggs

1 egg yolk

1 -14oz. can sweetened condensed milk

½ cup fresh key lime juice (you can use bottled, or regular lime juice)

2 Tablespoons water

1-2 drops green food coloring (optional)

1 teaspoon grated lime peel

1 graham cracker crust

1 cup whipping cream

2 Tablespoons sugar

½ teaspoon pure vanilla extract

Key lime slices for garnish

 

Preheat oven to 350 F.

In a large mixing bowl, beat eggs and egg yolk with a whisk until well combined.

Gradually add sweetened condensed milk, beating until well combined.

Add lime juice, water, and food coloring. Whisk until well mixed.

Pour into crust.

Place pie on a baking sheet.

Bake for 20 mninutes, or until almost set in the center.

Cool on wire rack for 1 hour.

Refrigerate at least 4 hours.

 

Topping -

Chill mixing bowl and beaters.

In chilled bowl, beat cream, sugar and vanilla on medium speed until stiff peaks form.

Spoon or pipe whipped cream around the edge of the pie and garnish with lime slices.
