Some days, we only have a few minutes to come up with dinner.

Keep it simple and stay calm.

 

Pick a meat that can be seasoned and sautéed in just a few minutes. That can be steak, chicken breast, pork chops, or fish.

You can throw potatoes in the microwave, or cook up some egg noodles, or open and heat a can of lowfat refried beans or any frozen vegetable mix.

While the meat and side dish are cooking, cut up fresh vegetables or fruits for a platter or salad. This requires no cooking. 

Ta-Da! Dinner!

Another favorite time saver of mine is to warm up and shred leftover chicken. Warm up some lowfat spicy refried beans. Put out sliced tomatoes, shredded lettuce, shredded cheese, salsa, warm tortillas and cut up fruit. A fun quick healthy dinner.

You can come up with tons of combinations. Once you get the hang of this, you can have a great dinner on the table in 15 or 20 minutes. Sometimes 10 minutes if you have to!
