Roasted Vegetable Pilaf

1 package rice pilaf, cooked according to directions

2 Tablespoons olive oil

2 Tablespoons Balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried thyme leaves

2 large plum tomatoes, quartered

1 zucchini cut in half, and then sliced

1 small red onion, sliced

 

In a small bowl, mix oil, vinegar, garlic and thyme.

 

While rice cooks, place cut vegetable in a medium baking pan and drizzle with oil mixture.

 

Bake vegetables at 400 degrees (F) for 8 – 10 minutes, or until golden brown.

 

Mix vegetables into rice and serve.

 

Makes 5- 1 cup servings.
