Maple & Mustard Glazed Salmon

1 lb. salmon cut into 4 pieces

salt and freshly ground pepper to taste

1 Tablespoon olive oil

2 Tablespoons whole grain mustard

3 Tablespoons Tamari *

6 Tablespoons maple syrup

 

Sprinkle both sides of salmon fillets with salt and pepper.

 

Heat oil in large pan over medium heat.

 

Place salmon in pan, skin side down and sear until crispy. Turn over.

 

Meanwhile, mix mustard and tamari in a separate bowl.

 

Once both sides of fish are browned, drain off any extra fat out of pan.

 

Return to heat. Drizzle salmon with maple syrup and cook on high until syrup is greatly reduced, about 2 minutes.

 

Pour mustard and tamari into pan and coat the fish completely.

 

Keep cooking until fish is slightly soft in the middle.

 

Spoon fish out of the pan on to a platter. Let it set for a minute, then pour the sauce from the pan over the salmon.

 

* Tamari is a type of soy sauce. It is richer, and better for you than it's American cousin.
