Honey-Ginger Glazed Salmon with Grilled Pineapple

6 salmon fillets

fresh ground black pepper

¼ cup orange juice

2 Tablespoons brown sugar

2 Tablespoons honey

2 Tablespoons Dijon mustard

1 Tablespoon soy sauce

½ inch ginger – grated

1 pineapple, peeled, cored, and sliced

 

Heat grill to medium (Can be a counter top grill too)

 

Season salmon with freshly ground black pepper

 

Mix orange juice, brown sugar, honey, mustard, soy sauce, and

ginger.

 

Grill pineapple until softened and beginning to turn brown, about 2

minutes per side. Move pineapple to outside.

 

Place salmon on the grill. After 3 minutes, baste with sauce. When it

begins to turn brown on the outside edges, turn over, baste, and grill

until cooked through – about 5 minutes.
