Zesty Grilled Shrimp

1 ½ lb. peeled and deveined extra large shrimp

¼ cup orange marmalade

¼ cup honey

2 – 3 teaspoons Cajun seasoning

1 Tablespoon olive oil

2 cups hot cooked rice

In a small bowl, mix oil and 2 teaspoons Cajun seasoning.

Rinse shrimp and pat dry.

Put shrimp in a zip-lock type bag.

Pour oil mix over shrimp.

Let marinate in the refrigerator for 1 hr., turning the bag occasionally.

If using wooden skewers, soak them in water.

In a small saucepan, mix marmalade, honey, and ½ teaspoon Cajun seasoning. Set aside.

Preheat grill.

Grease grill rack.

Drain shrimp and discard marinade.

Thread shrimp on skewers.

Grill covered for 7-9 minutes over medium heat until shrimp are opague. Turn once halfway through cooking time.

Stir marmalade mix over low heat for 2-3 minutes or until melted. Drizzle over shrimp skewers.

Serve with hot cooked rice.

Makes 4 servings.
