Dinner Worthy Chicken Salad

Finally, chicken salad has had a make-over

 

2 cups cooked chicken, cubed

1/2 cup frozen peas, thawed

1/4 cup chopped olives

1/4 cup shredded carrot

2 Tablespoons fresh minced onion

 

1/2 cup mayonnaise (lowfat is fine)

1 Tablespoon yellow, or spicy brown mustard

1/2 teaspoon Worcestershire Sauce

1/4 teaspoon fresh ground black pepper

 

In a medium bowl, mix chicken, peas, olives, carrot and onion.

 In a separate bowl, mix remaining ingredients.

 Pour dressing over chicken mixture and toss to coat.

 Chill through.

 Serves 2 - 3
