1 Lb. Jalapeño or favorite hot peppers, sliced

3 carrots, sliced

2 celery stalks, sliced

1 large onion, sliced

½ cup small cauliflower pieces

¾ cup water

½ cup olive oil

1 teaspoon oregano

2 cups sugar

 

Place cut up vegetables and water in a large saucepan. Boil covered for 3 minutes.

 

Remove from heat. Add oil, oregano, and sugar. Gently mix well.

 

Let cool.

 

Place in a one quart jar with tight fitting lid.
