Turkey Chili

2 Tablespoons olive oil

1 large onion chopped

1 tablespoons minced garlic

1 red bell peppers cut into ¼ inch cubes

1 teaspoon minced jalapeño pepper

2 Tablespoons chili powder

1 teaspoon ground cumin

½ teaspoon ground coriander

4 cups small diced turkey

1 28-oz. Can crushed tomatoes

1 15-oz. dark red kidney beans, drained and rinsed

1 cup beer

½ cup chopped parsley

½ cup sliced black olives

shredded cheddar cheese and diced onion for topping – optional

 

Heat oil in a large pot over medium heat.

Add onion and garlic.

Cook, stirring constantly for about 5 minutes.

Add red pepper and jalapeño.

Cook, stirring for about 10 minutes.

Stir in the spices and cook over low heat for 2 more minutes.

Turn off heat.

Stir in the rest of the ingredients except toppings.

Simmer for 12 minutes. Do not boil.

Serve immediately with cheese and diced onion topping if desired.
