Pork Tenderloin with Caraway Tomato Sauce

½ cup teriyaki sauce

¼ cup fresh lemon juice

Salt & pepper

1 ½ -2 pounds pork tenderloin

1 -14 oz. can Italian style diced tomatoes, drained

4 ounces tomato sauce

2 tablespoons brown sugar

1 teaspoon Worcestershire

¼ cup dried dark raisins, chopped fine

2 teaspoons caraway seeds

In a non-reactive container (non-metal), combine teriyaki sauce, lemon juice, salt and pepper. Add the pork and marinate covered, overnight.

Drain marinade from meat- discard.

Grill pork over direct heat until almost cooked. Cover with foil and let stand 10 minutes. Meat will continue cooking.

While pork is cooking- prepare sauce;

Combine the tomatoes, sauce, brown sugar, Worcestershire, raisins and caraway seeds in a saucepan. Simmer over low heat, mashing frequently to thicken, about 20 minutes.

Slice pork and top with sauce.
