Herb Rubbed Pork Chops

4 boneless pork chops (1 lb.)
1/3 cup dried parsely
1/4 cup dried marjoram
1/4 cup dried thyme
3 Tablespoons rubbed sage
2 Tablespoons garlic powder
2 Tablespoons onion powder
1 teaspoon ground cinnamon

1 Tablespoon oil or butter

Mix dry seasonings in a bowl.

Rub each pork chop with 1/2 teaspoon of the seasoning. Do not place pork chops in the bowl. You will have enough rub for several uses.

Melt oil or butter to coat skillet. Cook chops about 5 minutes per side - covered, over medium heat. Do not over cook.
Covering and only cooking until just done helps preserve moisture.
