Crock Pot Beef Fajitas

1 ½ lb. flank steak

1 onion, halved and sliced in ½ inch slices

1 green bell pepper, cut into ½ inch strips

1 red bell pepper, cut into ½ inch strips

1 jalapeno, chopped

1 Tablespoon cilantro

2 cloves garlic, peeled and minced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon coriander

1 8-oz. can chopped tomatoes

12 8” flour tortillas

Toppings- shredded cheddar cheese, salsa, guacamole, sour cream (use sour cream very sparingly!)

Cut flank steak into 6 pieces.

Place meat and vegetables in crockpot.

Add seasonings and mix well.

Add tomatoes with juice.

See you in a few hours!

Cover and cook-

High – 4-5 hours

Medium – 8-10 hours

 

Before serving- remove meat and shred with 2 forks, or thinly slice.

Return meat to pot.

Spoon meat mixture on warmed tortillas. Top with favorite toppings.
