Moroccan Chicken

Talk about unexpected! This is fun, colorful, and so easy!

 

4 boneless, skinless chicken breast halves, cut into 1 inch pieces

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, crushed

1 Tablespoon freshly grated ginger

1 6oz. package long grain and wild rice mix

1/4 teaspoon ground cinnamon

1/4 teaspoon fresh ground black pepper

1/4 teaspoon cayenne pepper

2 medium yellow squash, cut into 1-inch pieces

2 apricots, cut into 8 segments and then halved.

1/2 cup raisins

1/2 cup dark tart cherries (thaw if using frozen) 

Prepare rice mixture according to package directions.  

Meanwhile, cook chicken, garlic, onions, and ginger in oil until chicken is no longer pink, and onion is tender.

Stir chicken into prepared rice mixture. Add remaining ingredients and cook through - covered, over low heat until squash is just tender, about 10 minutes.
