Chicken with Zucchini & Tomatoes

½ to ¾ lbs. chicken tenders

1 medium zucchini

1 small can diced tomatoes

1 clove garlic, mince

1 cup rice


Coat pan with butter or spray. Saute garlic about 1 minute.


Add chicken tenders and cook about 5 minutes.


Slice zucchini into 1/4 inch slices, then quarter.


Prepare rice according to package directions.


Put enough soy sauce in the bottom of a medium sauté pan to coat the bottom. Stir in zucchini until covered and heated through. Do not overcook.


Add tomatoes with the juice. Heat thoroughly.


To Serve: Place bed of rice on plate. Top with chicken tenders.

Top with zucchini and tomato mixture.
