Teriyaki Glazed Chicken

Teriyaki glazed chicken is a break from barbequed. It's great served with lots of fresh fruits and vegetables. 

You need-

1/4 cup soy sauce

1/4 cup pineapple juice

1 tablespoon vegetable oil

2 teaspoons fresh chopped ginger root, or ½ teaspoon ground ginger

1 teaspoon sugar

1 clove garlic, chopped, or ¼ teaspoon garlic powder.

1 tablespoon corn starch

1 tablespoon water

2-4 boneless chicken breasts (depending on how many you are serving)

Place a little coconut oil, or canola oil, or even a little butter in a sauté pan – just enough to coat the pan. Sprinkle the chicken with garlic powder. Cook the chicken about 5 minutes per side until just done through, but not overcooked.

While the chicken is cooking, place the marinade ingredients in a bowl or cup. Mix well.

Pour the marinade mixture into a small pan. Cook and stir over med. heat until the sauce starts to thicken. Pour the sauce over the chicken. Cover and warm over low heat for a couple of minutes before serving.

I like to serve this with fresh pineapple wedges, green beans, and some sort of rice dish on the side.
